As a child, I stayed away from oatmeal raisin cookies–I didn’t particularly like the raisins in cookies. They were too sticky or squishy or something. I never quite understood when my friends or family liked eating them. But now, as an adult, I really like how raisins add flavor and texture to things like cookies and oatmeal. I even eat them as a snack sometimes. I’ve come a long way!! My kids also really like raisins in oatmeal and in cookies! But, the best part about raisins, in my opinion, is that they are a natural sweetener! They add sweetness while still providing fiber–a win-win! And for those who are still getting used to eating lower-sugar treats, these cookies are not overly sweet, but taste perfect to those who prefer lower sugar content in foods.
How to Make Vegan Banana Oatmeal Raisin Cookies

Preheat the oven to 350 degrees.
In a mixing bowl, add the bananas and mash thoroughly. Add the sunflower butter and stir well. Add the remainder of the ingredients and stir until a thick batter forms. More oats may be needed to make the batter more stiff.




On a baking sheet lined with a silicone mat, spoon the batter onto the sheet and form into rough circles. Smash slightly before baking.

In the pre-heated oven, bake for 8-10 minutes. Remove from the oven and let cool for 1-2 minutes.

You can use almond butter or peanut butter in this recipe if you want to use nuts.
