I really do love pancakes! I will eat them for breakfast and for dinner. I find them to be an easy meal that all of my kids love. I make a basic pancake and then fill the table with toppings such as berries, bananas, plant-based yogurt, nut butters, chocolate chips, or maple syrup. I like to make these pancakes with no added sugar so that I don’t feel guilty if I add a little bit of sweetener on top. Enjoy these simple tofu protein pancakes!!
How to Make Easy Tofu Protein Pancakes
Equipment Needed:
High Speed Blender or Food Processor
Instructions:
Add all ingredients into a food processor or high speed blender.

Blend until mixed well or until a smooth texture is formed. It should be a thick pancake batter consistency.

Preheat a cast iron skillet or other non-stick pan over medium heat. Add a little oil if needed.
Pour or dollop each pancake onto the skillet and cook for 2-3 minutes. Flip the pancake and cook for another 2-3 minutes or until golden brown and fully cooked. Repeat for the remainder of the batter. More milk may be needed to be added to keep the consistency. Makes 10-12 pancakes!


Serve immediately with berries, bananas, nut butter, maple syrup, or plant-based yogurt.

Note
Feel free to add more milk if you want a thinner pancake.
Use Firm or Silken Tofu. Firm tofu may end up with thicker consistency, but it also usually has more protein per serving.
