No-Bake Mint Brownies

These no-bake mint brownies come together really quickly–perfect for sudden cravings or last minute dessert requests. They taste amazing but are guilt-free because of the low added sugar. Made with a few simple ingredients, these brownies are gluten-free, Vegan, and healthy!

My daughter asked me what my favorite dessert flavor combination was. While I knew hers was chocolate and peanut butter, I had to go with chocolate and mint. From the time I was a little girl, whenever we went out for ice cream as a family, I ordered mint chocolate chip. I even sampled other flavors, but most of the time I stuck with the mint chip. I loved everything mint–Grasshopper cookies, Junior Mints, Thin Mints, Andes candies–you name it–I loved them all. I even attended Brigham Young University, where they made a big deal about their mint brownies! They were sooo good! 

Now that I try to make healthier choices and am gluten and dairy-free, I don’t eat those kinds of treats anymore. But I don’t have to be deprived. I can make my own!! And I think they taste just as good or even better. I love the real deep flavors that come from healthier ingredients.

How to Make No-Bake Mint Brownies:

Equipment Needed:

Food Processor

Silicone Spatula

Double boiler or saucepan

9×9 inch Baking dish

Instructions:

Brownie Layer:

In a small glass bowl, soak the dates in the boiling water for a few minutes or until tender. Drain but reserve the liquid.

Add the walnuts, cocoa powder, and salt to the bowl of a food processor fitted with the S-blade. Blend until the walnut pieces are very small.

Add the soaked drained dates to the food processor and mix until a sticky clump forms. If it is too dry, add the reserved liquid from the dates one teaspoon at time to the food processor. 

Press the brownie layer into a 9×9 inch baking dish and set aside.

Ganache Layer:

In a double boiler or a small saucepan, add the chocolate chips, almond milk, and mint extract. Stir over very low heat until the chips are melted and a smooth ganache forms.

Spread over the brownie layer and place in the fridge until the top layer hardens and sets–about 20 minutes. Alternatively, it can be eaten right away.

Cut into squares and enjoy!
