These protein balls were one of the first things I made that really made my kids believe me when I said that I could make really healthy food that would also taste amazing! Now they know that they will (mostly) like anything I make. These protein balls are perfect for a mid-morning or afternoon snack. But with a truffle-like texture, they can also be enjoyed as a dessert. To make them especially decadent and fancy looking, roll them in coconut, cocoa powder, or crushed peanuts. These protein balls also travel well for an on-the-go snack or lunchbox treat.
How to Make Rich Chocolate Protein Balls

In a small glass bowl, soak the pitted dates in the warm water until soft, about 30 minutes. Put in the microwave for one minute to speed up the soak. Drain the dates, but preserve the liquid to use if needed.

In the bowl of a food processor, add the drained dates and the remainder of the ingredients, including the peanut butter (make your own here).

Blend until mixed well. The mixture needs to be slightly sticky and dough-like. If it is too crumbly, add the liquid from the dates one tablespoon at a time and continue to blend. It is done when the mixture is chewy and can be pinched and it stays together.


Roll into one-inch balls or press into a 9×13 glass baking dish and cut into squares.
