My oldest son lived in Germany for two years as a missionary for the Church of Jesus Christ of Latter-Day Saints. While he was away, I loved to make this dish for my family. It reminded me of my son and made us all fall in love with German food.
The prep for this dinner is minimal due to the use of frozen sweet potato fries. Regular French fries can also be used, but I prefer to use the sweet potato ones. For an even healthier dinner, try these baked sweet potato fries. The sauce makes the dish, so feel free to swap other proteins such as tempeh, lentils, or beans.
How to Make Healthy Vegan Currywurst
Equipment needed:
Glass baking dish or Air Fryer
Baking sheet with Silicone mat
Instructions:
Baked Tofu:
Drain and press the tofu lightly to get as much water out as possible. Tear into chunks, or cut into cubes. Place in a glass baking dish, add the oil, curry powder, salt and pepper and stir to coat.
Bake at 400 degrees for 20-30 minutes until firm and slightly crispy.
Alternatively, place cut tofu into a glass bowl, coat with the oil, curry powder, salt, and pepper and then transfer to an air fryer to crisp.
Fries:
Bake the frozen sweet potato fries according to packaged directions, or make these baked sweet potato fries.
Sauce:
In a small saucepan, add tomato sauce and the remainder of the ingredients. Heat over medium heat until it is warm and all of the spices are blended together. Keep warm


Plate the sweet potato fries, top with the baked tofu and curry sauce!

Note
The sauce makes this dish, so feel free to use other plant-based proteins in this recipe. Tempeh, lentils, or other beans would still taste amazing!
