Peanut butter and chocolate combine to make such a heavenly rich flavor. My family all enjoy the combination. Years ago, I learned to make not-so-healthy homemade peanut butter bars which used lots of sugar and gluten ingredients. But now I much prefer the lower sugar bars made without gluten. My family loves them too! Enjoy making these easy peanut butter bars!
In a mixing bowl, add the peanut butter, maple syrup, vanilla, and salt. Stir to combine.
Add the almond flour and stir until a stiff dough forms. Add more almond flour as needed.
Press the peanut butter dough into a 9x9 baking dish or loaf pan. It can be lined with parchment paper, if desired, but the dough doesn’t usually stick to the pan. Set aside.
Chocolate Layer:
In a small saucepan or double boiler, add the chocolate chips and peanut butter. Over very low heat, melt the chocolate chips and peanut butter until smooth, stirring as needed, being careful not to burn the chocolate.
Spread the chocolate over the peanut butter layer and sprinkle with coarse salt if desired. Place in the refrigerator until the chocolate has hardened, around 30 minutes.
Remove from the fridge and cut into squares. Enjoy!
