Easy Vegan Gluten-Free Falafel with Lemon Dill Dressing

These Vegan Falafel patties can be eaten as the main protein along with vegetables, put into a sandwich, or made into a grain bowl. Versatile and delicious. My family loves these Falafel patties!

How to make the Falafel patties:

Ingredient list:

For the Falafel Patties:

2  15 oz. cans Chickpeas

½ cup fresh parsley

1 small white or yellow onion

½ lemon juiced

5 cloves garlic, peeled

¼ cup chickpea flour

3 tsp ground cumin

1 tsp coriander

½ tsp paprika

1 ½ tsp sea salt

2 Tbsp olive oil

For the Lemon Dill Dressing:

2 cloves garlic, peeled

½ lemon juiced

¼ cup unsweetened plain almond milk

½ tsp salt

2 tsp dill weed

1 Tbsp olive oil

Equipment needed:

Chef’s knife and cutting board

Food processor

Ice cream scoop

Cookie sheet with silicone mat or parchment paper or a cast iron skillet

High speed blender (such as a Nutribullet)

Instructions:

Preheat the oven to 350 degrees.

Roughly chop the onion, garlic, and parsley and place in the food processor. 

Drain the chickpeas and add to the bowl of the food processor. Juice the lemon and add to the same bowl.

Add the remainder of the ingredients into the food processor and puree until well blended but a little chunky. If fewer chunks are preferred, then blend until smooth.

Using an ice cream scoop (I find it to be the easiest), scoop onto a cookie sheet lined with parchment paper or a silicone mat. Smash the patties slightly and then place them in the oven and bake for 15 minutes. Remove from the oven and flip the patties over and then cook for an additional 15 minutes or until desired crispiness.

Alternatively, these patties can be fried in avocado oil in a cast iron pan. Place scoops in the hot oil and smash slightly. Cook on each side for 2-3 minutes.

Make the dressing by placing all of the ingredients into a high speed blender and blend until smooth. Serve over the cooked falafel patties.
