Using a microwave safe bowl, add the pitted dates and almond milk. Microwave on high for 60 seconds to soften the dates. Alternatively, allow the dates to soak in the almond milk for an hour.

Add all of the pie filling ingredients including the dates and almond milk into the bowl of a large food processor fitted with the S-blade. Puree the ingredients until smooth. This could take several minutes. Stop the food processor and scrape down the sides with a spatula as necessary. Pour into a 9x9 inch baking dish and set aside.

Preheat the oven to 350°F (190°C) 🔥.

In a separate bowl, add the ingredients for the crumble topping except for the Vegan butter. Stir until well combined. Add the softened Vegan butter and stir until small clumps form. Spread evenly over the filling in the baking dish. Place in the oven on the center oven rack and bake for 30 minutes. Let rest for 10 minutes before serving. Serve warm.
Feel free to substitute other nuts for the pecans or omit them altogether for dietary reasons.
